Japan gets some of the heaviest snow on earth, and the rated stays that sit in it turn winter into the reason to go: an outdoor bath while it falls, deep quiet, and the whitest possible version of the country. From the Niseko powder to the snow country of Niigata and the old hot springs of Tohoku, here are the houses to book for the cold months.

The powder north
Hokkaido's Niseko is the deep-powder capital, and Zaborin is the rated way to stay there — fifteen villas, each with an indoor and an outdoor bath, a few minutes from the lifts. Further south, in Niigata's snow country, Satoyama Jujo and ryugon turn old farmhouses and the relocated houses of village headmen and wealthy farmers into design ryokan buried in white for months. Bathing outdoors while it snows is the whole idea.
Old onsen in the cold
Away from the ski lifts, the snow suits an old hot spring even better. Takinoya keeps a classic garden ryokan in the steam of Noboribetsu; YAMAGATA THE TAKINAMI runs an in-room open-air bath at Akayu; and BYAKU Narai sits in a Nakasendo post town that looks its best under snow. These are stays for a soak and a fire rather than a lift pass.

When is the snow at its best?
January and February for the deepest powder in Niseko and the Niigata snow country; the Tohoku onsen hold their snow into March. Book the New Year and ski weeks early — the villa-style houses are tiny and fill first.
