What an auberge is
The word comes from the French roadside inn, but the idea is simple: the restaurant is the destination, and you sleep upstairs so you can eat without watching the clock or the last train. In Japan that has produced two strains β the French kitchen (Hiramatsu's houses, arcana izu) and the kaiseki-in-all-but-name ryokan. Both keep the rooms few so the table can stay the star.
From Tokyo to Yufuin
At the top of the range, Auberge TOKITO keeps just four rooms on Tokyo's western edge and is the most expensive rated stay in the country. ENOWA YUFUIN cooks from its own farm in Kyushu; and arcana izu and THE HIRAMATSU houses run French kitchens in forest and coast. The common thread is a short menu, a small dining room, and a cellar worth the trip.

What is the difference between an auberge and a ryokan?
A ryokan is built around the bath and the tatami room, with kaiseki included; an auberge is built around the restaurant, with the room a comfortable place to sleep it off. In practice the best Japanese auberges feel like a ryokan with a chef in charge instead of an okami.
