OSTERIA SINCERITÀ is a three-room auberge at Akayu Onsen in Nanyo, Yamagata, run as the annex of Yamagata The Takinami. Each room is a 135-150 m² maisonette with two twin bedrooms and a cypress open-air bath, and the ALBA and MONTE rooms each add a private sauna. The hot spring is piped straight from the source with no added water, and there is also a bath of Zao stone. Chef Makoto Harada cooks Italian dinners from Okitama Basin produce such as Yonezawa beef and organic Funagata mushrooms, served at an open-kitchen restaurant on the ground floor. The whole building is non-smoking with no lift, and guests are asked to keep quiet.
